Milk and Dark Chocolate

The "Conching" Process Develops the Full Chocolate Flavor

Uzwil, Switzerland -- Since June 2001, Japanese have a new source for their sweet passion: In the Kanto prefecture, Fuji Oil Co. Ltd. put the most up-to-date facility kind into operation. The production plant was designed and constructed by Buhler Yokohama.

Fuji Oil Co. Ltd. serves a food growth market with high-grade products. For 50 years now, Fuji Oil has been producing foodstuffs and products used in the manufacture of foods and based on vegetable oils and fats plus proteins. The chocolate market segment is still a very young area of production, but is one of the promising markets of the future.

In Kanto, Japan’s biggest chocolate market, Fuji Oil has now started up its latest production facility. The dimensions of this state-of-the-art plant leave no doubt as to the goals of this company: to become Japan’s market leader in the field of chocolate and confectionery. Fuji Oil has found a partner in Buhler whose know-how allows this ambitious goal to be successfully realized.

High-tech with environment in mind

Buhler Yokohama was in charge of the entire plant and process engineering, which relies on state-of-the-art technology and gives due consideration to the environment. This is an absolute plus for Fuji Oil, for which quality and environmental compatibility are two main pillars of its corporate philosophy.

The heart of the chocolate production system is made up of a mixer, a two-stage refining line, and a conche. The system produces milk and dark chocolate, which is further processed into pralines, confectionery and molded chocolate. Relying on advanced electronic measurement techniques, the operators can determine the parameters needed for obtaining the most uniformly fine chocolate possible while achieving an optimal product output. A proven Buhler process control system controls production. Based on PC technology, its “intelligent” terminals with user-friendly displays and touch screens enable the operators to control and monitor the individual process operations.

Buhler know-how for top performance

The management of Fuji Oil was impressed by its new production site in Kanto. Buhler has succeeded in laying the technical basis for further expanding the company’s chocolate production activities. The entire plant has been designed with growth in mind and can therefore fully meet the market needs of the future. Those are bright prospects for Japanese aficionados of chocolate and other sweet delights.

Buhler is a global Technology Group and System Partner for plant and equipment and for process expertise in the fields of Food Processing, Chemical Engineering, and Die Casting, with a worldwide payroll of about 6,500.

Mr. Steed wants help grinding:

What type of equipment can be used to grind or mill a rubber-like compound.  1/4-inch in average particle size to 150 micron.  Bulk density is about 14 PCF.

This is a polymerized compound that looks like and feels like crumb rubber.  We have sent samples to two size reduction equipment manufacturers with no luck.  We would like to avoid cryrogenics if possible.  Any suggestions?
